Commercial drains fail in their own way. Kitchen grease cools and coats the pipe until the opening closes, so a cable only clears a channel and leaves the grease behind, while hydro jetting cleans the pipe back to bare wall. When a line keeps failing we run a camera through it and show you the video instead of selling a calendar of return visits.
Grease interceptor service is maintenance that needs records. It should happen on a regular schedule, ahead of any backup, and the log matters when the health inspector asks to see it. We set an interval based on the volume your kitchen really produces rather than a one-size schedule.

Working around your business hours
Most commercial work we do is booked outside business hours, since jetting across a kitchen floor in the middle of dinner service costs you more than the plumbing does. Emergencies get 24-hour emergency response, weekends included, and a person answers the phone 24 hours a day instead of an answering service that holds the message until morning.

Reading the building on the first visit
At a property we have not worked on before, the first visit is mostly about learning the building. Where does the water main enter, where are the shutoff valves, and do they still turn? Which fixtures share a branch line? Is the kitchen drain cast iron, and how much of its opening is left? Where does the grease interceptor tie in, and is there a pumping log?
That groundwork pays off later. When the next leak happens, the plumber walks straight to the right valve instead of searching for it while water spreads across the floor.
Multi-unit buildings and HOA common areas
Multi-unit plumbing has a twist a single house does not: the leak appears in one unit while the cause sits in another, or in a shared stack no one can reach. Before anyone opens a wall, we put a camera through the shared line to find where the trouble really starts, so the association pays for the repair it needs rather than for exploratory demolition.
Repeat backups in a stack usually mean the pipe opening has narrowed, not that something is stuck in it, and snaking it again and again is the most expensive way to put off that decision. We would rather show you the video once.
